Ingredients

  • 2 fillets cod fillets skinless or with skin, as preferred
  • 1 tablespoon olive oil for coating
  • 1 teaspoon lemon zest freshly grated
  • 1 teaspoon dried herbs such as thyme or parsley
  • to taste salt and pepper for seasoning

Equipment

  • Air fryer
  • Small mixing bowl
  • Measuring spoons
  • Tongs

Method

  1. Start by patting the cod fillets dry with paper towels to remove excess moisture, which helps achieve a better crisp.
  2. In a small bowl, mix together olive oil, lemon zest, dried herbs, salt, and pepper to create a marinade and seasoning blend.
  3. Brush or rub the seasoning mixture generously over both sides of the cod fillets, ensuring an even coating.
  4. Preheat your air fryer to 200°C (392°F) for about 3 minutes if your model recommends preheating.
  5. Place the seasoned fillets in the air fryer basket, skin-side down if applicable, making sure they aren’t touching to allow proper air circulation.
  6. Cook the cod for around 10-12 minutes, or until the exterior is golden and crispy, and the flesh easily flakes with a fork.
  7. Use tongs to carefully remove the cod fillets from the air fryer and transfer them onto a plate.
  8. Let the fish rest for a minute, then serve immediately, garnished with extra lemon wedges or herbs if desired.
