  • 400 g pasta (penne or fettuccine)
  • 8 slices bacon preferably thick-cut
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Method
 

  1. Bring a large pot of salted water to a boil, then add the pasta. Cook according to package instructions until al dente, then drain and set aside.
  2. In a skillet over medium heat, cook the bacon strips until crispy, about 8-10 minutes. Remove and drain on paper towels, then chop into small pieces.
  3. In the same skillet, discard excess bacon fat leaving about 1 tablespoon, then add the butter and minced garlic. Sauté until fragrant, about 30 seconds to 1 minute, until garlic is golden and smells savory.
  4. Pour in the heavy cream and bring to a gentle simmer, stirring continuously. Let it cook for 2-3 minutes until slightly thickened and creamy.
  5. Add the grated parmesan cheese and shredded cheddar into the sauce, stirring until melted and smooth. Season with salt and pepper to taste.
  6. Fold the cooked pasta into the sauce, tossing gently to coat every strand with the rich, cheesy sauce. Cook together for 1-2 minutes to meld flavors.
  7. Sprinkle the crispy bacon pieces over the pasta and gently toss to distribute evenly. Serve immediately for best flavor and texture.
