Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts cut into strips
  • 12 oz uncooked pasta (penne or fettuccine) adjust cooking time later based on type
  • 1 tablespoon Cajun seasoning adjust for spice preference
  • 1 teaspoon smoked paprika adds smoky flavor
  • 4 cloves garlic minced
  • 1 cup chicken broth can substitute with water or stock
  • 1 cup heavy cream for creaminess
  • 1 cup shredded cheddar cheese for richness
  • 2 tablespoons olive oil for browning chicken

Method
 

  1. Heat a skillet over medium-high heat and add olive oil. Once shimmering, add the chicken strips and cook for 4-5 minutes until golden brown on all sides; set aside.
  2. In the slow cooker, combine the uncooked pasta, Cajun seasoning, smoked paprika, minced garlic, and chicken broth. Stir well to evenly distribute the spices.
  3. Add the browned chicken pieces on top of the pasta mixture and press down gently to submerge slightly.
  4. Cover the slow cooker and cook on low for 3 to 4 hours, or until the pasta is tender and the chicken is cooked through.
  5. Once cooked, open the lid and stir in heavy cream and shredded cheddar cheese until fully combined and the sauce is smooth and creamy.
  6. Taste and season with salt and pepper as desired. For extra flavor, stir in a splash of hot sauce if you like it spicy.
  7. Let the dish rest for a few minutes to thicken slightly, then serve hot, garnished with chopped parsley if desired.

Notes

Make sure not to overcook the pasta, as it can become mushy. Stir midway through cooking to prevent sticking. Adjust the spice level by adding more Cajun seasoning if preferred.
