Ingredients
  

  • 2 slices bread slices preferably thick-cut or artisan
  • 1 cup cooked chicken shredded or sliced
  • 1/2 cup ripe avocado mashed or sliced
  • 2 slices cheddar or Monterey Jack cheese enough to cover the bread
  • 1 tablespoon butter for spreading and toasting
  • to taste salt and pepper for seasoning

Method
 

  1. Preheat your oven to 400°F (200°C), or prepare a skillet on medium heat for toasting.
  2. Spread a thin layer of butter on one side of each bread slice to prepare for toasting.
  3. Layer the chicken evenly on the unbuttered side of one bread slice, then top with avocado slices or mashed avocado.
  4. Add a slice of cheese over the avocado, ensuring it covers the toppings well.
  5. Place the second bread slice on top, buttered side facing out, to complete the sandwich.
  6. If using an oven: Place the sandwich on a baking sheet and bake for about 8-10 minutes, until the bread is golden brown and the cheese is melted. If using a skillet: Grill the sandwich over medium heat, pressing slightly, until both sides are crispy and the cheese melts, about 3-4 minutes per side.
  7. Once toasted, remove the sandwich and let it rest for a minute so the melted cheese sets slightly.
  8. Cut the sandwich diagonally or in half, revealing the warm, gooey inside with layers of chicken, avocado, and melted cheese.
  9. Serve immediately while the cheese is still melty and enjoy the crispy, creamy contrast.
