  • 1 pound Italian sausage casings removed if using links
  • 2 bell peppers bell peppers preferably a mix of colors, sliced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 8 ounces pasta such as penne or fusilli
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • ½ cup parmesan cheese optional for garnish

Method
 

  1. Cook the pasta in a large pot of boiling, salted water until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the sausage, breaking it apart with a spoon, and cook until browned and cooked through, about 5-7 minutes.
  3. Add the sliced bell peppers to the skillet and cook, stirring occasionally, until they soften and caramelize slightly, about 5 minutes, filling the kitchen with a sweet, roasted aroma.
  4. Stir in the minced garlic and cook for another minute until fragrant, the mixture scented with garlic and sausage juices.
  5. Drop the cooked pasta into the skillet and toss to coat evenly in the creamy sausage and pepper mixture, letting it simmer for a minute to absorb the flavors.
  6. Taste and season with salt and pepper, adjusting to your preference to balance savory and richness.
  7. Finish by sprinkling with grated Parmesan cheese for added depth, if desired, then serve the pasta warm straight from the skillet.
