Ingredients
  

  • 1 pack frozen puff pastry keep frozen until use
  • 4 oz cream cheese softened for easy mixing
  • 1 cup shredded cheddar cheese sharp or mild, based on preference
  • 2 tbsp chopped fresh herbs like chives or thyme
  • 1 egg egg beaten for egg wash
  • Optional additional fillings bacon, caramelized onions, roasted tomatoes, etc.

Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper. Keep the frozen puff pastry in its package until ready to cut.
  2. Remove the puff pastry from the freezer and cut it into 2-inch squares using a sharp knife or pizza cutter. Keep the squares cold and work quickly to prevent warming.
  3. In a small bowl, mix the softened cream cheese, shredded cheddar, chopped herbs, salt, and pepper until well combined. This will be your flavorful filling.
  4. Place a puff pastry square on your work surface. Spoon about a teaspoon of the cheese mixture into the center of each square.
  5. Fold each square into a rectangle or triangle, pinching or pressing the edges to seal in the filling. Keep the bites chilled on the work surface.
  6. Arrange the filled bites on the prepared baking sheet, spacing them evenly. Brush the tops lightly with the beaten egg for a glossy, golden finish.
  7. Bake in the preheated oven for 15-18 minutes, or until the bites are puffed, golden, and crispy. The filling should be bubbling and the pastry layers flaky.
  8. Remove from the oven and let the bites rest for 2-3 minutes. The filling will settle slightly, making them easier to handle.
