  • 1 lb chicken breast or thigh, cut into chunks preferably skinless and boneless
  • 1 lb gnocchi fresh or frozen
  • 4 cloves garlic minced
  • 2 tablespoons olive oil divided
  • Salt and pepper to taste

Method
 

  1. Season the chicken chunks with salt and pepper, then heat one tablespoon of olive oil in your skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until they’re golden brown and cooked through, about 6-8 minutes. Remove from the pan and set aside.
  2. Add the remaining tablespoon of olive oil to the same skillet. Toss in the gnocchi and cook over medium-high heat, pressing them down gently. Let them sit undisturbed for a few minutes, until they turn golden and crispy on the bottom.
  3. Stir the gnocchi and continue cooking until most sides are crispy, about 5 minutes. Then, add the minced garlic to the pan, stirring constantly until fragrant and slightly caramelized, about 1 minute.
  4. Reduce the heat to medium. Return the cooked chicken to the skillet, mixing everything together. Let it cook for another 2-3 minutes so the flavors meld, and the garlic infuses the dish.
  5. Once everything is hot and well-coated with the garlic pan juices, taste and adjust the seasoning with more salt and pepper if needed. The dish should look golden, crispy, and fragrant with garlic.
