Method
 

  1. Heat olive oil in a skillet over medium heat until shimmering and fragrant.
  2. Add the minced garlic to the pan and cook, stirring often, until fragrant and lightly golden, about 30 seconds to 1 minute.
  3. Add chopped ripe tomatoes to the skillet, stirring to combine with the garlic and oil.
  4. Cook the tomato mixture until the tomatoes break down and release their juices, about 5-7 minutes, stirring occasionally.
  5. Season the tomato and garlic mixture with salt and black pepper to taste, gently stirring to incorporate.
  6. Spread the tomato mixture evenly across the skillet, creating a base layer.
  7. Sprinkle or layer the shredded mozzarella evenly over the tomato base, covering as much surface as possible.
  8. Reduce the heat to low and cover the skillet with a lid or foil. Let cook for about 5 minutes, until the cheese is melted and bubbly.
  9. Remove the skillet from heat and let it sit for a minute to settle.
  10. Optionally, garnish with fresh herbs or a drizzle of olive oil before serving.

Notes
