Method

  3. In a large bowl, whisk the eggs and sugar together until the mixture is fluffy and pale, with a slight sheen, about 2-3 minutes.
  4. Pour the slightly cooled melted chocolate mixture into the eggs and sugar, stirring gently to combine until smooth and uniform in color.
  5. Sift the flour, cocoa powder, and salt into the wet mixture, then fold gently with a spatula until just combined. Be careful not to overmix to keep the brownies tender.
