- Heat a skillet over medium heat and add a tablespoon of butter. Sauté the sliced kielbasa until it’s browned and slightly crispy, about 5-7 minutes. Remove from heat and set aside.
- Boil the diced potatoes in a pot of salted water until they are tender and easily pierced with a fork, about 10-12 minutes. Drain the potatoes well and let them sit for a minute to dry out slightly.
- Mash the boiled potatoes with a tablespoon of butter, salt, and pepper until smooth and creamy. Spread the mashed potatoes evenly in the bottom of your baking dish.
- Layer the sautéed kielbasa evenly over the mashed potatoes, distributing it to cover the surface completely.
- Sprinkle the shredded cheddar cheese evenly over the kielbasa layer, covering all the ingredients.
- Melt the remaining tablespoon of butter and drizzle it over the top of the cheese layer for extra flavor and crunch as it bakes.
- Preheat your oven to 375°F (190°C). Bake the casserole uncovered for about 25-30 minutes, until the cheese is bubbly and golden brown on top.
- Remove the casserole from the oven and let it rest for 5 minutes. Serve hot, with optional sour cream on the side for added creaminess.1 pound kielbasa
Notes
Ensure you drain the kielbasa well to prevent excess greasiness. Keep an eye on the casserole during baking to prevent over browning. Feel free to add sautéed onions or paprika for extra flavor.
