- Heat a skillet over medium-high heat and add the oil. Once shimmering, add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
- Add chili powder, cumin, and a pinch of salt to the beef. Stir well to evenly coat the meat with the spices, and cook for another minute until fragrant.
- Meanwhile, preheat your oven to 375°F (190°C). Lay out four tortillas on a baking sheet, and toast them in the oven for 3-4 minutes until slightly crispy.
- Remove the tortillas from the oven and spread a layer of spicy tomato sauce on each. This will be the base of your layers.
- Spoon a generous portion of seasoned beef onto the sauce layer of each tortilla, spreading it evenly with the back of a spoon.
- Top each beef layer with a handful of shredded cheese, covering the beef completely for gooey goodness.
- Layer a second tortilla on top of each assembled layer, pressing down gently to stabilize. Repeat the process: spread sauce, add beef, and sprinkle cheese.
- Once all layers are stacked, sprinkle a little extra cheese on top for a cheesy crust. Place the assembled pizzas back in the oven and bake for 10-12 minutes until bubbling and golden around the edges.
- Remove from the oven and let rest for a couple of minutes. Slice into wedges with a sharp knife for clean servings.
- Serve hot, topped with optional fresh herbs, sour cream, or sliced jalapeños for added flavor.
Notes
For extra crispness, crisp individual tortillas in a hot skillet before layering. Feel free to customize with toppings like jalapeños, olives, or cilantro for added flair.
